How to Prepare Chicken Lollipops
The magic behind these chicken lollipops starts with the preparation in the kitchen. Grab your chicken drumsticks and let’s transform them into easy-to-eat lollipops that stand upright on the grill.
- Cutting the Tendons: Begin by slicing straight down where the meat meets the bone, working your way around to separate the tendons from the bone.
- Pulling the Meat: Push the bottom part of the drumstick down and pull the top part up, using your finger to strip all the tendons off the bone. It takes a bit of strength, but the result is worth it.
- Flatten the Bottom: Use a sharp knife to level off the bottom of the bone so the lollipop stands upright during cooking.
- Optional Bone Removal: You can dig out the little bone sticking up, but it’s not necessary and risks damaging the meat. The bone softens during cooking and doesn’t affect the eating experience much.
This technique not only makes the chicken easier to handle but also creates a fun presentation perfect for a festive BBQ chicken spread.

Seasoning the Firecracker Chicken Lollipops
In the video these lollipops get their bold spiciness from Cattlemen’s Grill Eight-Second Ride Carne Asada seasoning as the base, prized for its fantastic flavor and moderate heat. For us at House of Q we think there are two more options that are great for the first layer of flavour:
Version 1
Competition Beef Rub (say 2 TB) plus Peppered Bovine (1 TB)
Version 2
House Rub (say 2 TB) plus cayenne powder (1 teaspoon)
Creating a ‘balance of flavour’ is really key to making a dish overpowering to simply woderful. As an example, Tom comments in the video that the Eight-Second Ride seasoning lacks sweetness. To balance this dominant feature overall, he adds a touch of brown sugar to contrast the heat. The ratio he does is six parts rub to one part brown sugar, but you can adjust this depending on your spice tolerance (for example, a 4:1 ratio for less heat).
Before applying the rub, a quick spritz of oil spray acts as a binder, helping the seasoning stick all around the chicken lollipops. Don’t forget to catch any excess rub on the tray below and use it to season the bottom side of the lollipops for maximum flavour.
Let the seasoned chicken rest for about five minutes so the rub can attach itself well before heading to the grill.
Grilling Technique for Crispy, Smoky BBQ Chicken
The key to perfectly cooked BBQ chicken lollipops lies in the grilling method. Chef Tom fires up a Yoder Smokers YS640 pellet grill loaded with cherry and pecan pellets, set at 325°F.
Chcioken can be a challenging food to get right on a smoker. To help get the skin just right, cook the chicken at a higher temperture such as around 325°F. The higher heat renders the fat, giving you that beautiful crispy texture everyone loves.
To add smoke flavor without the long cook time, Chef Tom uses a pellet tube smoker inside the chamber, infusing the chicken with a subtle smoky aroma in under 45 minutes.
Some grillers wrap foil around the bone to prevent over-browning, but Chef Tom prefers leaving the bones exposed to keep things simple without affecting the final taste.

Finishing the Chicken with a Signature Glaze
After about 30 minutes on the grill, when the internal temperature reaches around 150°F, it’s time to add a glaze that brings all the flavours together.
In the video, he modifies his glaze starting with a jar of House of Q Backyard Classic Barbecue Sauce (used to be called Rock’n Red), which is tangy with just a hint of heat. To this, Chef Tom adds:
- ¾ cup brown sugar for sweetness
- ¼ cup apple cider vinegar to thin the sauce and add tang
- A pinch of Grinder’s Death Nectar Hot Sauce—a fiery addition clocking in at 337,000 Scoville units, so just a little goes a long way
As an option, we think Rock’n Red 2.0 BBQ Sauce would be perfect. Of course with the same ‘balance-of-flavour’ additions he does – that is, with the sugar, vinegar and hot sauce.
An additional tip at this point is to make sure the sugar is nicely dissolved in the sauce and it is heated just to make it warm. By warming the sauce, this allows an even coverage of the sauce on each piece of chicken. Each lollipop is dipped into the sauce, avoiding the bone ends to keep them clean for easy handling. After glazing, the chicken goes back on the grill to let the sauce tack up and caramelize.

Once the chicken reaches a finishing temperature of 170°F, remove the chicken from the grill and let rest for a few minutes. It’s time to enjoy. The first bite delivers a complex flavor profile: sweet, tangy, smoky, and with a slow-building heat that doesn’t overpower.
